At the competition, Khai prepared Salangane’s nest soup. The Salangane’s nest he brought to the competition was from the coastal province of Khanh Hoa, his native province. His creativeness in preparing this dish was to successfully combine Asian and European styles. He made sauce from tomatoes, carrots, lemongrass, turnips, onion and ginkgo (from Europe), which created the delicate combination of flavours with the nest of the salangane (from Asia) to create the special, award winning soup./.
